Once you’re alone, put on your favorite music, pour your favorite drink, and try this super yummy and light dinner recipe for one from Martha Stewart. It’s absolutely delicious!
Sesame Shrimp and Noodles For One
2 ounces thin spaghetti
2 tablespoons orange marmalade
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
1/2 teaspoon red-wine vinegar
1/4 teaspoon ground ginger
6 ounces medium shrimp
1 small yellow bell pepper, cut into 1/4-inch strips
2 scallions, thinly sliced
1. In a medium pot of boiling salted water, cook spaghetti until al dente, according to package instructions. Drain; return to pot.
2. Meanwhile, in a medium bowl, whisk together marmalade, soy sauce, oil, vinegar, and ginger. Season with salt and pepper. Add shrimp, bell pepper, and scallions; toss to combine. Transfer to a rimmed (or toaster oven) baking sheet, and spread in a single layer.
3. Heat broiler (or toaster oven). Broil, 4 inches from heat source, until shrimp are opaque throughout, about 3 minutes. Transfer contents of baking sheet to pot; toss with pasta to combine.
4. Pour onto your favorite dish or into your favorite bowl, put your feet up, and enjoy your me-time!
After that delicious meal (my mouth is watering just thinking about it!), it’s time for a bubble bath.
I found this super easy bubble bath recipe on http://www.realsimple.com and have used it several times since then! It’s so relaxing.
Foaming Vanilla-Honey Bath
In a clean container, mix together 1 cup light oil (almond, sunflower, or canola), 1/2 cup honey, 1/2 cup mild liquid hand or body soap, and 1 tablespoon vanilla extract. To use, shake gently to remix and pour 1/4 cup under the running water as your fill the tub. This recipe yields about 16 ounces, or enough for 8 baths.
Light some candles, turn off the lights, pop a bottle of your favorite wine (and maybe bring along a bar of dark chocolate!), and hop in!
